Drawing on a wealth of culinary experience, Calum has worked at a variety of renowned restaurants including; The Ivy, Aurora at the Andaz Hotel, Indigo at One Aldwych Hotel and was Senior Sous Chef at Roast in Borough Market, prior to heading up the kitchen at Holborn Dining Room.
Julien Foussadier
 -  General Manager
 
Julien joined Holborn Dining Room from Searcys, the UK’s most prestigious catering companies with a world-famous reputation for catering at iconic and exclusive venues for hire, where he held the position of General Manager. In 2005 he was named UK champion in the Habano Sommelier competition for cigar sommeliers. Passionate and rich in many experiences spanning over 14 years, Julien is successfully leading the front of house team.
PAMELA DEBATTISTA
 -  ASSISTANT GENERAL MANAGER
 
We welcome Pamela to Holborn Dining Room as Assistant General Manager from The Ritz, one of London’s most famous five-star hotels. Her expertise in luxury hospitality and events management makes her a fantastic addition to the team alongside Julien and the Holborn Dining Room team.
ROSA SIMONTE
 -  ASSISTANT GENERAL MANAGER
 
Joining Holborn Dining Room’s team in 2016, from roles including Assistant Restaurant Manager at Quaglino’s, part of the D&D group, Rosa has brought with her an abundance of experience and knowledge from both London’s vibrant dining scene and the city’s luxury hotel and members’ club industries.
