Holborn Dining Room Executive Head Chef Calum Franklin has kept London foodies talking with his artful creations including his Pithiviers, Pâtés en Croûte, and quintessentially British sausage rolls available at Holborn Dining Room and Holborn Delicatessen. Now Chef Calum is unveiling a selection of pies which are modern takes on the traditional dish with a heightened focus on technique and craftsmanship. The classic British pies, including flavours such as Steak and Kidney and Chicken, Girolle and Tarragon, use the best ingredients from local producers which are encased in delicate pastry featuring unique shapes and imprints to reflect each pie’s personality. The seasonal pie series begins with Lamb curry pie consisting of slow cooked shoulder made with mutton, potato and traditional curry spice mix – perfect for Spring.
